Mixed Fruit Pancakes

Pancakes are a great way to turn leftovers into an exciting meal. Fruit bowl looking a little sad? Save your fruit by adding it to these delicious fruity pancakes.

If you have a food waste collection, throw your egg shells, fruit peelings and cores into your kitchen caddy!
1 egg, beaten
150ml milk
100g flour (plain, wholemeal, gluten-free or another favourite variety)
50g dried mixed fruit
100g finely chopped fruit (apples, pears, bananas or whatever else is in your fruit bowl)
Dash oil
1 tsp sugar
1 tsp mixed spice or cinammon
• Beat the egg into the milk, put the flour into a bowl and gradually stir in the milk mixture until smooth
• Mix in the dried and fresh fruit
• Heat a non-stick pan and add the oil, then add a tablespoonful of the pancake mixture
• Cook for 2 minutes, then flip over with a spatula and cook for another minute or two on the other side
• The pancakes should be about 8cm in diameter and only 2-4mm thick. You should be able to cook 2 or 3 in a large pan at the same time
• Mix the sugar and spice together and sprinkle over the hot pancakes before serving
