Indian inspired mild chicken curry served with bombay potatoes

Meat and potatoes left over from your Sunday Roast? Turn them into a brand new dish with this Indian inspired chicken curry dish.

Cook this recipe to use up roast potatoes and cooked meat leftovers!
CHICKEN CURRY INGREDIENTS
1 tbsp. oil
2 onions thinly sliced
½ tsp turmeric
45g curry powder
200g mango chutney
350g chicken stock / water
400g leftover chicken (any cooked meat can be used beef, lamb, pork or vegetables as an alternative)
BOMBAY POTATOES INGREDIENTS
2 tbsp. vegetable oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp grated ginger
1 red onion chopped
1 tsp ground coriander
¼ tsp turmeric powder
Pinch of salt
500g old roast potatoes
1 tbsp. chopped coriander
CHICKEN CURRY METHOD
• Heat the oil in a large pan
• Add the onions and fry for 3 minutes ensuring they don’t brown
• Add the turmeric and curry powder to the onions and cook for a further 2 minutes
• Stir in the mango chutney and pour over the chicken stock; simmer for around 10 minutes
• Season to taste with the salt
• Either blend the sauce until smooth or leave it slightly chunky
• Cut the leftover meat into bite size pieces and mix into the sauce
• Leave the chicken to marinate off the heat for around 30 minutes (The Bombay potatoes can be cooked whilst the meat is marinating – see recipe below)
• Once the chicken is marinated, put the sauce back on the hob and gently simmer for around 10 minutes
• Serve once the meat is hot
BOMBAY POTATOES METHOD
• Heat the oven to 220C/Gas mark 7
• Heat the oil in a pan and add the mustard and cumin seeds
• Allow the seeds to splutter for 2 minutes
• Stir in the ginger and the onion and cook gently for 4 minutes
• Add the ground coriander and the turmeric; cook for 1 minute
• Add the salt and a little water to create a gravy consistency
• Stir in the potatoes until well coated in the sauce
• If the pan is ovenproof, transfer to the oven and heat for 15 to 20 minutes until the potatoes are hot. Alternatively, the potatoes in sauce can be heated in the oven on a baking tray
• Garnish the potatoes with the chopped coriander
