Pork & potato croquettes

Having a party? These pork and potato croquettes are delicious and will keep all your guests happy. They’re also great for using up pork, bread and potatoes and saving them from the rubbish bin!

Make using waste pork, potatoes and bread
1.5 kg pork belly
2kg/ 2.5 kg potatoes
1 kg breadcrumbs
Zest of 1 lemon
1 kg apples
200 g sugar
Juice of 1 lemon
500 g flour
10 eggs
100 g milk
salt and pepper
Salt the meat and cook the pork belly in the oven for 4/5 hours at 180C until the meat is tender.
Boil the potatoes, cool and smash them with a fork.
Pull the meat apart and then mix the pork belly into the smashed potatoes. Season with salt and pepper.
Roll the croquettes into small sausage shapes and put them into a bowl with the milk and the eggs mixed, until they are coated all over.
Take the croquettes out and cover them with breadcrumbs.
Deep fry them in sunflower oil or put them in the oven and bake them
