Banana Pancakes

Not a fan of ripe bananas? Mash them up and make these quick and easy banana pancakes!

TIP

Make these pancakes to stop ripe bananas from going to waste!

  • Ingredients
  • Method

1 ripe/overripe banana, well mashed
100g self-raising flour
1 tsp cinnamon
½ tsp baking powder
1 cup soya milk (or any other kind of milk)

Mix the dry ingredients together in a large bowl.

In another bowl, mash up the banana - the more mashed the better.

Add the dry ingredients to the mashed banana and then gradually add the milk until you get a thick liquid consistency. Use a fork to mix.

Scoop out two dessert spoons of the batter into a heated, lightly oiled saucepan and spread evenly with the back of the spoon.

Cook for a few minutes. When it’s ready to be turned over, it will loosen from the pan.

Turn over the pancake. Cook on the other side for a further few minutes.

Serve with fruit and enjoy!
