Reinvented rocky road brownie

Don’t throw out old cake. Add it to Rocky Road mix instead! We’re all guilty of buying with our eyes instead of our stomachs, which means we often end up with cake and doughnuts which are a bit dry and hard. Instead of chucking them, throw them into the mix and make this yummy rocky road brownie.

Cook this recipe to use up cake and doughnut leftovers!
190g dark chocolate broken in squares
180g butter
3 eggs
250g caster sugar
Pinch of salt
150g plain flour
200g left over cakes, doughnuts
• Preheat the oven to 180C/Gas mark 4
• Gently melt the chocolate and butter together in a pan
• Place the eggs and sugar in a mixer with a pinch of salt and whisk until the mixture doubles in size and is white, light and fluffy
• Mix the melted chocolate and butter with the egg mix
• Add the flour and mix well
• Cut the left-over cakes in to small pieces and place on to a baking tray
• Pour over the brownie mix and place in the oven for around 17 minutes
• Remove from oven and leave to cool
